An amazing twist on a gin sour with the addition of Aperol. The Italian aperitif features bitter orange flavours but only a soft bitterness which is complimented with the sweet agave syrup. Try using an amber agave - it will give a medium-intensity caramel flavour to your cocktail.


  • 45mL Aperol
  • 45mL London Dry Gin
  • 25mL Lemon Juice
  • 1 Egg White
  • 1 tsp Agave Syrup


  1. Dry shake the egg white to emulsify
  2. Add ice and the remaining ingredients to a cocktail shaker
  3. Shake & double strain into a cocktail glass
