One of my favourites! The John Collins is a super easy long drink that requires minimal equipment - a drinking vessel and a bar spoon for mixing.

Ingredients

  • 45mL London Dry Gin
  • 30mL Lemon Juice
  • 15mL Sugar Syrup
  • 60mL Soda

Instructions

  1. Fill a hi-ball glass with ice
  2. Add gin, lemon juice & sugar syrup
  3. Top with a dash of soda
  4. Stir
  5. Garnish with a slice or twist of lemon

Notes

There is much debate in relation to the original spirit used for a collins but I suggest using the following spirits: London Dry Gin for a John Collins and Old Tom Gin for a Tom Collins.
