How to make a Tom Collins

The Tom Collins uses an Old Tom Gin which is slightly sweeter than a London Dry Gin.

Ingredients

  • 45mL Old Tom Gin (such as Haymans)
  • 30mL Lemon Juice
  • 15mL Sugar Syrup
  • 60mL Soda

Instructions

  1. Pour all ingredients into a hi-ball glass filled with ice
  2. Stir gently
  3. Garnish with a slice of lemon and maraschino cherry

Notes

The IBA (International Bartender Association) calls for a dash of bitters but I have always made my collins without.
