An amazing twist on a gin sour with the addition of Aperol. The Italian aperitif features bitter orange flavours but only a soft bitterness which is complimented with the sweet agave syrup. Try using an amber agave - it will give a medium-intensity caramel flavour to your cocktail.
45mL London Dry Gin
25mL Lemon Juice
1 Egg White
1 tsp Agave Syrup
Dry shake the egg white to emulsify
Add ice and the remaining ingredients to a cocktail shaker
Shake & double strain into a cocktail glass
