This method is perfect for groups as you can presqueeze the lime juice, making the mojito will now be a quick, clean and painfree process.
Ingredients
- 60mL White Rum (2 oz)
- 30mL Lime Juice (1 oz)
- 22.5mL Sugar Syrup (¾ oz)
- 6-8 Mint Leaves
- 60mL Soda (2 oz)
Instructions
- Fill a hi-ball glass with ice
- Pick some fresh mint and tear in half, place on the palm of your hand, clap the mint and add to glass
- Add the rum, lime juice and sugar syrup
- Top with a splash of soda
- Stir thoroughly

This Mai Tai recipe is a slight adaptation on Trader Vic’s recipe from 1944 - excluding the rare and expensive Wray and Nephew rum and upping the curacao in place of the rock candy syrup (which is also known as rich simple syrup - a 2:1 simple syrup).

- 60mL Aged Rum (2 oz)
- 22.5mL Orange Curacao (¾ oz)
- 30mL Fresh Lime Juice (1 oz)
- 15mL Orgeat (½ oz)

- Shake with ice
- Strain over fresh ice into a double old fashioned glass
- Garnish with a lime wheel

The original trademarked version is held by the Gosling family. It calls for Gosling’s Bermudan rum but any dark rum to accompany a spicy ginger beer will work - just don’t substitute for ginger ale. Apparently many venues that utilise a different rum have had to resort to cleverly renaming the drink to Safe Harbour, in order to avoid litigation from the Gosling’s family.
