The Chi Chi is essentially a vodka Pina Colada. Vodka is fairly neutral so clean pineapple and coconut flavours are not shadowed. The ratios below were featured in The 12 Bottle Bar book - it's fairly heavy on the cream of coconut (or as they refer to is as coconut milk syrup) compared to other recipes which call for half the cream of coconut and up to double the pineapple juice. - Combine the 3 ingredients into your cocktail shaker
- Shake with crushed ice
- Dump into a hi-ball glass
- Garnish with a pineapple wedge and fronds
