Clarified Paloma

The Clarified Paloma is made by curdling and clarifying with creamy coconut milk. The results are clear, bright and the flavours are unified.

Ingredients
 

  • 45 ml Reposado Tequila, Patr贸n
  • 15 ml Ancho Reyes Chile Liqueur
  • 15 ml Aperol
  • 60 ml Ruby Red Grapefruit Juice
  • 15 ml Lime Juice
  • 15 ml Agave Syrup
  • 60 ml Soda Water
  • 30 ml Coconut Milk

Instructions
 

Clarifying

  • Combine all the ingredients except soda water and coconut milk into a mixing jug
  • Measure the coconut milk into a second mixing jug
  • Slowly transfer the contents of the first jug and pour over the coconut milk
  • Let sit for 15-30 minutes for the drink to curdle
  • Strain through a coffee filter to clarify the drink
  • Filter a second time for best results

The Drink

  • Measure 90ml of the clarified liquid into a high ball glass over ice
  • Spritz with soda water
  • Stir gently
