The Pearl of Puebla cocktail recipe is a Mexican rendition on Audrey Saunder's French Pearl. Substituting mezcal in place of gin. A complex cocktail with smoky, honeyed citrus and plenty of herbal notes.
60mL Mezcal (2 oz)
22.5mL Yellow Chartreuse (¾ oz)
22.5mL Fresh Lime Juice (¾ oz)
1 Barspoon of Pastis (or Absinthe)
1 Barspoon of Agave
4 Oregano Sprigs
Gently muddle the oregano with the fresh lime juice
