The Pearl of Puebla cocktail recipe is a Mexican rendition on Audrey Saunder’s French Pearl. Substituting mezcal in place of gin. A complex cocktail with smoky, honeyed citrus and plenty of herbal notes.

  • 60 mL Mezcal 2 oz
  • 22.5 mL Yellow Chartreuse ¾ oz
  • 22.5 mL Fresh Lime Juice ¾ oz
  • 1 Barspoon of Pastis or Absinthe
  • 1 Barspoon of Agave
  • 4 Oregano Sprigs


  • Gently muddle the oregano with the fresh lime juice
  • Add the remaining ingredients to your cocktail shaker
  • Shake with ice for 12-15 seconds
  • Strain into a chilled coupe glass
