
Jeffrey Morgenthaler's Eggnog
Shortly after Jeffrey Morgenthaler started at Clyde Common he decided to create a unique eggnog for the restaurant on a weekly basis. His first creation, a combination of añejo tequila and Amontillado sherry, was so well received that it made no sense to change it.The Amontillado sherry brings a nutty characteristic that pairs exceptionally well with the tequila.Check out Jeffrey's base eggnog recipe
Ingredients
- 2 Large Eggs
- 75 g Superfine / Caster Sugar
- 180 ml Whole Milk
- 120 ml Heavy Cream
- 60 ml Añejo Tequila
- 75 ml Amontillado Sherry
Instructions
- Blend the eggs on medium for 1 minute
- Slowly add the sugar and blend for a further 1 minutes
- Add the remaining ingredients and incorporate
- Transfer to a sterilised bottled and refrigerate
- Pour into a chilled glass to serve
- Garnish with freshly grated nutmeg
