Kingston Soundsystem Cocktail Recipe

The team from Punch created a challenge for bartenders to translate a music genre into a drink. Shannon from Glady’s, NY took inspiration from a favourite reggae track 'Skylarking'. Given the bird reference in the song title, Shannon decided to take drink inspiration from the Jungle Bird.
The bitter component (Campari) in the Jungle Bird is replaced with Suze, a Gentian liqueur - although the woody, herbal notes of the liqueur are a little overshadowed by the combination of intense rums.

Ingredients
 

  • 30 ml Aged Pot Still Jamaican Rum
  • 15 ml White Overproof Rum
  • 15 ml Suze
  • 22.5 ml Lime Juice
  • 15 ml Soursop or 15ml Pineapple Juice + 7.5ml Demerera Syrup

Instructions
 

  • Combine all ingredients into your cocktail shaker
  • Shake with ice
  • Strain over fresh ice
  • Garnish with two pineapple fronds and a lime wheel
