Paddington Cocktail Recipe

PDT in NYC has a bear named Paddington within the venue. David Slape was the first bartender to be hired at PDT and he created this riff on a Hemingway Daiquiri with Paddington’s treat of choice, orange marmalade.

  • 45 mL White Rum 1½ oz
  • 15 mL Lillet Blanc ½ oz
  • 15 mL Fresh Grapefruit Juice ½ oz
  • 15 mL Fresh Lemon Juice ½ oz
  • 1 Barspoon Orange Marmalade
  • 1 Dash Absinthe


  • Combine all ingredients into your cocktail shaker
  • Shake with ice
  • Add an absinthe rinse to your glass
  • Strain into a chilled coupe glass
  • Garnish with a grapefruit twist
