Penicillin Cocktail Recipe

The Penicillin is a modern classic cocktail created by Australian-born bartender, Sam Ross. Sam has made many well-known cocktails whilst spending his time behind the bar at infamous NY cocktail bars such as Milk & Honey, Pegu Club and Attaboy. The Penicillin combines sweet honey and spicy ginger syrup along with a blended whisky and a smoky Islay whisky floated on top.

  • 60 ml blended Scotch whisky
  • 22.5 ml lemon juice
  • 10 ml honey syrup
  • 10 ml ginger syrup
  • 7.5 ml Islay whisky, float


  • In a cocktail shaker, combine all ingredients except the Islay whisky
  • Shake with ice for 10-12 seconds
  • Strain over fresh ice into an old fashioned glass
  • Float the Islay Whisky
  • Garnish with skewered candied ginger or a lemon wheel
