How to make a Ruby ‘n’ Rosemary Fizz

Kangaroo Island O Gin is an intriguing spirit and its botanical’s work well with rosemary and citrus. Both grapefruit and lemons are readily available in South Australia almost all year round. A fizz is light and refreshing.

  • 60 mL Kangaroo Island O Gin
  • 30 mL Fresh Lemon Juice
  • 20 mL Ruby Red Grapefruit Juice
  • 20 mL Sugar Syrup 1:1
  • Egg White
  • 60 mL Soda


  • Add the egg white and a single ice cube to your cocktail shaker
  • Shake to emulsify the egg white (this is called ‘dry shaking’ – the single ice cube helps chill and create a tight seal with the steel shaker)
  • Add the gin, juices and sugar syrup to your cocktail shaker
  • Fill your cocktail shaker with ice
  • Shake and double strain over fresh ice
  • Top with a dash of soda
  • Garnish with sprig of rosemary and wedge of ruby red grapefruit
