
Spiced Pear & Elderflower Collins
This variation on a collins is a creation of bartender Stacey Swenson of Manhattan bar Dante. Stacey calls for warming cognac but this can easily be substituted to gin or vodka for something lighter and brighter. The flavours of elderflower, pear, honey and spices (white pepper, ginger, nutmeg and clove) work wonderfully together.
Ingredients
- 30 ml Cognac
- 30 ml St Germain Elderflower Liqueur
- 22.5 ml Pear Juice
- 22.5 ml Lemon Juice
- 15 ml French Four Spice Honey Syrup (Honey Syrup with white pepper, ginger, nutmeg & clove)
- 45 ml Soda Water
Instructions
- Combine all the ingredients (except the soda water) into your cocktail shaker
- Shake for 12-15 seconds
- Strain over ice into a high ball glass
- Top with a dash of soda water
- Garnish with a lemon twist
