
Upgraded Paloma
The Upgraded Paloma was created by Zac Overman (creator of the Angostura Colada). This Paloma recipe calls for a housemade salted grapefruit cordial and a small splash of Campari. The salty, bitter combination seems to enhance the agave notes of the tequila.
Ingredients
- 60 ml Reposado Tequila, Patrón (original calls for Blanco)
- 30 ml Salted Grapefruit Cordial
- 22.5 ml Lime Juice
- 15 ml Campari
- 60 ml Soda Water
Salted Grapefruit Cordial
- 1 Ruby Red Grapefruit Peel 1 x Grapefruit
- 1 cup Sugar
- 0.5 cup Ruby Red Grapefruit Juice
- 0.25 cup Lime Juice
- 0.25 cup Water
- 1.5 tsp Salt Flakes
Instructions
- Fill your high ball glass with ice
- Combine the ingredients over the ice
- Gently stir
- Garnish with a grapefruit wedge
Salted Grapefruit Syrup
- Combine the grapefruit peel and sugar in a bowl, leave overnight
- Add the remaining cordial ingredients
- Transfer to a sterilised bottle
- Shake and store in the fridge (up to two weeks)
