The Upgraded Paloma was created by Zac Overman (creator of the Angostura Colada). This Paloma recipe calls for a housemade salted grapefruit cordial and a small splash of Campari. The salty, bitter combination seems to enhance the agave notes of the tequila.

  • 60 ml Reposado Tequila, Patrón (original calls for Blanco)
  • 30 ml Salted Grapefruit Cordial
  • 22.5 ml Lime Juice
  • 15 ml Campari
  • 60 ml Soda Water

Salted Grapefruit Cordial

  • 1 Ruby Red Grapefruit Peel 1 x Grapefruit
  • 1 cup Sugar
  • 0.5 cup Ruby Red Grapefruit Juice
  • 0.25 cup Lime Juice
  • 0.25 cup Water
  • 1.5 tsp Salt Flakes


  • Fill your high ball glass with ice
  • Combine the ingredients over the ice
  • Gently stir
  • Garnish with a grapefruit wedge

Salted Grapefruit Syrup

  • Combine the grapefruit peel and sugar in a bowl, leave overnight
  • Add the remaining cordial ingredients
  • Transfer to a sterilised bottle
  • Shake and store in the fridge (up to two weeks)
