
Watermelon Margarita
This margarita recipe comes from Uncle Pete's Cocktail Shop on YouTube. It features mezcal for more smoky character and acid-modified watermelon juice, rather than using both watermelon juice AND lime juice. The acid-modified juice has the flavour of watermelon with the same acidic profile of a lime.
Ingredients
- 60 ml mezcal
- 22.5 ml acidulated watermelon juice
- 22.5 ml dry curacao (Pierre Ferrand)
- 1 dash agave nectar
- 3 drops saline solution (20%)
Instructions
- In a cocktail shaker, combine all the ingredients
- Shake with ice for 10-12 seconds
- Double strain into a chilled coupe glass
Acidulated Watermelon Juice
- Juice some watermelon, taking note of the weight
- Add 4% of the weight in citric acid
- Add 2% of the weight in malic acid
- Stir until dissolved
