How to make a Ruby ‘n’ Rosemary Fizz
Kangaroo Island O Gin is an intriguing spirit and its botanical’s work well with rosemary and citrus. Both grapefruit and lemons are readily available in South Australia almost all year round. A fizz is light and refreshing.
Kangaroo Island O Gin
Fresh Lemon Juice
Ruby Red Grapefruit Juice
Add the egg white and a single ice cube to your cocktail shaker
Shake to emulsify the egg white (this is called ‘dry shaking’ – the single ice cube helps chill and create a tight seal with the steel shaker)
Add the gin, juices and sugar syrup to your cocktail shaker
Fill your cocktail shaker with ice
Shake and double strain over fresh ice
Top with a dash of soda
Garnish with sprig of rosemary and wedge of ruby red grapefruit
