The original was created back in the 1930s by Don the Beachcomber and was a blended cocktail. This variation ditches the blender and calls for a quick muddle to extract the fresh pineapple flavours. I think it has little more intensity given that it doesn't have the additional dilution from blended ice.If you don't have any peach liqueur, feel free to substitute with another fruit liqueur (in the video below I used Apricot Brandy Liqueur).You can find this recipe and tonnes of other tiki cocktails in the Smuggler's Cove cocktail book.
